Domaine Laurent Mouton: A Legacy of Winemaking in Givry
Domaine Laurent Mouton is a family-run estate located in Givry, part of the Côte Chalonnaise, that spans 12 hectares of vineyards. The domaine has been passed down through four generations of winemakers, beginning with Eugène Mouton, who first cultivated vines on the property. His son, Charles Mouton, originally a blacksmith, expanded the vineyard to 3 hectares and sold the entire production to local négociants, a common practice at the time. In 1968, Gérard Mouton took over the domaine with his wife Armelle, and in 1976, they began bottling and selling their wines under their own label.
Family Tradition and Sustainable Practices
In 2002, Laurent Mouton joined the family estate, continuing the winemaking legacy while focusing on sustainable viticulture. Today, the domaine practices lutte raisonnée, using minimal chemical intervention and prioritizing soil health through regular plowing. The goal is to enhance the biological richness of the soil while controlling yields to ensure optimal grape quality. Hand-harvesting and meticulous sorting in both the vineyard and the cellar ensure that only the finest grapes are used.

Winemaking and Terroir
The domaine’s philosophy of precision and creativity extends to its winemaking techniques. Red wines are destemmed and undergo a 12-20 day maceration with temperature control before aging in oak barrels, including a portion of new oak for the premier cru wines. White wines are pressed immediately after harvest and fermented in a combination of stainless steel vats and oak barrels, with maturation on lees to add complexity and body.

Domaine Laurent Mouton is known for its Givry 1er Cru wines, such as the Clos Jus, which showcases the richness and elegance of Pinot Noir. The estate’s Cuvée Excellence, a Chardonnay, is another standout, known for its aromatic complexity and full-bodied structure. Each wine reflects the terroir of Givry, combining finesse, balance, and structure.
