Thomas Boccon : Crafting Wine with Tradition and Precision
Thomas Boccon’s winemaking technique is a fusion of traditional Burgundian practices and innovative approaches he acquired through diverse experiences. After completing formal education at the Lycée Viticole de Beaune, one of France’s top viticulture schools, Boccon sought out international perspectives by working in New Zealand, where he gained exposure to different climates, grape varieties, and modern winemaking processes. Thomas is the winemaker at Domaine François Mikulski and married to Francois’ daughter.
Selection of Grapes:
Boccon prioritizes sourcing high-quality Chardonnay grapes for his wines. In his role as a négociant, he works closely with vineyard owners across the Côte de Beaune and Meursault to select grapes that best reflect the terroir of each specific plot. His focus is on minimal intervention in the vineyard, allowing the natural characteristics of the region’s limestone-rich soils to shine through.
Vinification:
In the winery, Boccon follows a philosophy of low-intervention winemaking. He emphasizes a balance between tradition and precision. This involves allowing native yeasts to drive fermentation, which enhances the complexity and depth of the wine. The fermentation occurs in oak barrels, with a portion of new oak, which adds texture and subtle vanilla notes to the wine, without overpowering the Chardonnay’s natural flavors.
Terroir Expression:
What sets Boccon’s wines apart is his dedication to terroir. He is known for highlighting the unique qualities of each vineyard he sources from. For his Meursault wines, the result is a complex mix of ripe fruit, mineral undertones, and floral aromas, reflecting the region’s marl-limestone soils and cool climate.
