Vézelay L'Elégante Domaine La Croix Montjoie

Situation: Plot of vines at the top of a slope. Altitude of 300m and southeast exposure. Close to the Morvan, our vines benefit from large temperature variations in summer, with intense heat in the afternoon and pleasant coolness at night.
Soil: Clay-limestone soil with exposed limestone rocks.
At the vine: Mechanical soil work, organic fertilizers, manual tasks for aeration and drying of the grapes. Organic farming.
Vinification: Beautiful, ripe grapes in perfect sanitary condition, gentle pressing, rigorous settling followed by alcoholic and malolactic fermentations in tank (75%) and barrels (25%).
Ageing: On fine lees for 9 months. 75% in tank and 25% in old barrels. No manipulation until bottling.
Guard time: Around five years, depending on the vintage.
