Thomas Boccon : Crafting Wine with Tradition and Precision

Thomas Boccon’s winemaking technique blends traditional Burgundian practices with innovative approaches acquired through his various professional experiences. After completing his studies at the Lycée Viticole in Beaune, one of France’s leading wine schools, Boccon sought international exposure by working in New Zealand, where he discovered different climates, grape varieties, and modern winemaking methods. Today, Thomas is a winemaker at Domaine François Mikulski and is married to François’s daughter.

Grape Sourcing

occon prioritizes sourcing high-quality Chardonnay for his wines. As a négociant, he works closely with vineyard owners in the Côte de Beaune and Meursault to select grapes that best capture the character of each individual parcel. He favors minimal intervention in the vineyard, allowing the natural qualities of the region’s limestone soils to fully express themselves.

Winemaking

In the cellar, Boccon applies a low-intervention winemaking philosophy that balances tradition and precision. This means allowing indigenous yeasts to drive fermentation, thereby enhancing the wine’s complexity and depth. Fermentation takes place in oak barrels, including a portion of new oak, which adds texture and subtle vanilla notes without masking the Chardonnay’s natural aromas.

 

 

Expression of Terroir

What sets Boccon’s wines apart is his commitment to terroir. He is known for highlighting the unique traits of each vineyard he sources from. His Meursaults offer a complex mix of ripe fruit, mineral nuances, and floral aromas, reflecting the region’s marl-limestone soils and cool climate. Boccon’s wines are crafted to age gracefully, gaining nuance and depth over time.

This combination of rigorous grape selection, gentle winemaking, and respect for terroir defines Boccon’s approach and has earned him a reputation as one of Burgundy’s most promising young winemakers. His techniques aim to produce authentic, elegant wines that reflect both modern influences and the ancestral traditions of Meursault.
