This is the flagship cuvée of the estate.
Farming 3 hectares of Bourgogne Côte d'Or Chardonnay in the commune of Meursault, I select vines aged between 35 and over 60 years to produce the 'Cuvée des Ormes,' which is located in the lieux-dits 'En l'Ormeau,' 'Les Pellans,' 'Les Malpoiriers,' and 'Les Dressolles.'
Manual harvest.
Aging is done for 12 months in barrels on lees.
Only one racking to unify this cuvée and it is placed in tank before bottling, which takes place after 16 to 18 months of aging, depending on the vintage.
This wine is best enjoyed between 2 and 6 years or more, depending on the vintage and its storage conditions.
