This cuvée comes from the blend of several parcels aged over 50 years, with complementary subsoils, either on shallow soils with lava that provides finesse and length, or on deeper soils composed of much more complex elements.
Manual harvest.
Aging in barrels (20-30% new barrels maximum) on lees for 12 to 14 months.
Only one racking to unify the cuvée and preparation for bottling after 16 to 18 months of aging, depending on the vintage.
Wine with aging potential of 5 to 10 years, depending on the vintage and storage conditions.
