This parcel is nestled between the terroirs of Savigny-les-Beaune and Aloxe-Corton and thus benefits from the geographical location of these prestigious neighbors, which gives it both body and bouquet.
Its subsoil consists of marly-limestone alluvium on a stony base.
Manual harvest.
Sorting in the vineyard and at the winery, depending on the vintage.
Grapes are placed in wooden tanks as whole clusters with a light manual crushing. Cold maceration for a few days followed by the start of natural fermentation (warming of the harvest) without added yeast.
Traditional Burgundy winemaking with punching down and pumping over for 15 to 20 days, depending on the vintage.
Aging in barrels for 12 to 14 months, racking for cuvée unification and aging in tanks for 2 to 3 months.
Bottling at the estate.
