Grape variety Pinot noir
Situation: Plot of vines located in Tharoiseau. The supplementary volume comes from the north of the department.
Soil: Clay-limestone, majority limestone
At the vine: Mechanical soil work, organic fertilizers, manual tasks for aeration and drying of the grapes. The plot is converted to organic farming for the portion owned.
Vinification: Beautiful, well-ripened grapes in perfect sanitary condition. Full destemming, cold maceration, followed by fermentation in tank.
Ageing: Ageing in tank and bottling in April
Guard time: 5 years
