Situation: Purchase of grapes from the lieux-dits of Irancy: la Cave, La Coumme, La Grande Côte
Soil: Calcareous soil
At the vine: In conversion to organic farming (2nd year). Manual harvest in crates
Vinification: 100% destemming. Cold maceration, delicate pump-overs, and fermentation in tank.
Ageing: Ageing in old barrels for 12 months. Bottling in September
Guard time: 10 years
