Situation - Vézelay
Grape variety Chardonnay
Situation: Plot of young vines (about 20 years old) at the bottom of a slope. Altitude of 300m and southeast exposure. Close to the Morvan, the vines benefit from large temperature variations in summer, with intense heat in the afternoon and pleasant coolness at night.
Soil: Mostly clayey, with compact blue marl clay present.
At the vine: Mechanical soil work, organic fertilizers, manual tasks for aeration and drying of the grapes. The plot is converted to organic farming.
Vinification: Beautiful grapes, well-ripened, with perfect sanitary condition, a rigorous settling, followed by alcoholic and malolactic fermentations in tank.
Ageing: On fine lees for 9 months in tanks. No manipulation until bottling.
Guard time: Best enjoyed in the first three years, at its fruitiest.
