Vézelay La Voluptueuse Domaine La Croix Montjoie

Situation: Plot of vines exposed to the southwest, older, with lower yields. Close to the Morvan, at 300m altitude, our vines benefit from large temperature variations in summer, with intense heat in the afternoon and pleasant coolness at night.
Soil: Clay-limestone soil with exposed limestone rocks.
At the vine: Mechanical soil work, organic fertilizers, manual tasks for aeration and drying of the grapes. The plot is converted to organic farming.
Vinification: Beautiful, well-ripened grapes in perfect sanitary condition, gentle pressing, rigorous settling followed by alcoholic and malolactic fermentations in barrels.
Ageing: On fine lees for 12 months. 100% in barrels, of which 20% are new barrels, lightly toasted. No manipulation until bottling.
Guard time: From five to seven years, depending on the vintage.
